Superchunk Super Bowl Cookies

The burning question of the week: What will you be indulging in come Super Bowl Sunday?

OK, the bigger question for most is, “Who’s gonna win?” Since my New York Jets couldn’t pull it out, my biggest concern becomes the food. I’m thinking that’s actually on a lot of peoples’ minds. Super Bowl Sunday has become that one big day people throw food cautions to the wind.

Now, I can get my wing on with the best of them, and step aside if ribs are anywhere within my reach (yes, I’m quite the lady). But we are focusing on the dessert for your party, and this week it’s simple, it’s a grab-and-go and, of course, it will be a home run. Just seeing if you were paying attention, it will be a touchdown! We are making Superchunk Super Bowl Cookies. They are oversized and packed with chocolate chunks, M&Ms, walnuts and beer nuts. Oh, game on! Beer nuts are a sweet and salty nut, they have a great crunch, and they really add a nice component to these cookies. Unfortunately, there is no actual beer in them, but of course a nice cold beer on game day tastes great with these cookies. I personally don’t like desserts you have to cut, put in a bowl, add any toppings to or generally just mess around with. I like to be able to show up, present them on a lovely platter and be done with it. I’m not lazy, (well, maybe a little, after a pound of ribs) I just like to watch the game and keep up with all the commercials. I must know what Budweiser and Doritos did this year. You know, the important stuff. So, whatever team you are rooting for, you will be the game winner when you show up with these delicious treats. I could barely write that with a straight face, too rah-rah, supermarket ad-esque. What I really meant to say was, make the cookies, it’s anybody’s game, and we’ll get ’em next year Jets (insert Broncos or your other favorite team here). Now, follow the directions, put some love into it, and invite me over when it’s done.

Before you start: You can change up the nuts in this recipe to your tastes (almonds, pecans, etc. would work). Make sure butter and eggs are room temperature.

Superchunk Super Bowl Cookies

2 cups flour
1/4 tsp. salt
1 tsp. baking soda
1 cup softened unsalted butter
1-1/2 cups brown sugar
2 eggs
1-1/4 tsp. vanilla
1/2 cup chopped walnuts
1 cup M&Ms (I used peanut)
1 cup semi-sweet chocolate chunks
1 cup beer nuts

Preheat oven to 350 degrees. In a small bowl, combine flour, salt and baking soda. Set aside. In large bowl, cream butter and brown sugar until smooth. Add in eggs, one at a time. Stir in vanilla. Beat dough with electric mixer or by hand until smooth and creamy.

Fold in walnuts, M&Ms, chocolate chunks and beer nuts. Drop by heaping tablespoon onto ungreased baking sheet. Bake for 10-12 minutes until edges are golden brown.

Take out of oven, and leave on baking sheet for four to five minutes.

Gently remove onto cooling rack or parchment paper. Let cool. Enjoy!

Note: These cookies spread a little when baking. Do not over-bake; the middle will look a little undone while the edges are golden brown. This is perfect.
