Chocolate Date Truffles

I might just have the easiest treat you will ev-ahh make. It is tasty, good for you, and the options are freaking endless. I had to use “freaking” to really drive home my point. I realize it’s more of a surfer-explaining-his-waves sort of term, but I don’t freaking care. It was necessary.

You know last week how I was telling you about my love for Green & Black’s Organic chocolate bars, and my favorite Chocolove bars? Well, what’s a girl to do with all that leftover chocolate when she is feeling creative and non-PMS?

I think Chocolate Date Truffles is the answer.

I use three different types of chocolate bars for this, but you can use your imagination and go wild.

Dates, while not being the prettiest of fruits, sure are good for you and have a natural sweetness that can cure any sweet tooth (in my case, teeth). They are a great source of vitamins and minerals for our bodies. Pairing them with dark chocolate makes them a very-good-for-your-heart-and-soul kind of treat.

I, of course, also enjoy a little red wine along with it, just to make sure I’m really healthing it up.

See how much I care about you all? Enough to eat tons o’ chocolate and drink a wee bit of wine just to come up with a recipe for the Weekly. Life does not suck.

I have a couple of different combos for you, one that we top with a nice melted 70 percent chocolate bar, just like you would a truffle. The other is just straight up chocolate and dates.

Roll these up into a nice little ball, or form them into little bars — it might make you feel like you are eating a lovely overpriced nutrition bar, thus shooting your happiness factor through the roof that you made it all by your little self.

My choices for the chocolate are Green & Black’s Organic Hazelnut and Currant, Dark Chocolate Cherry, Chocolove Almond and Sea Salt in Dark Chocolate, or Chilies and Cherries in Dark Chocolate. You can’t go wrong with any of those. Good is good, and all those are freaking good.

Now follow the directions, put some love into it and invite me over when it’s done.

Chocolate Date Truffles

1 chocolate bar of your choice (use the 3.5- or 3.2-ounce bar), Chocolove or Green & Black’s Organics are my choice

20 dates

2 ounces dark chocolate (70 percent chocolate is my choice)

In food processor, combine chocolate and dates on pulse setting until well-combined and easy to form into shape you desire.

Melt dark chocolate slowly in small pan over low heat (or slowly in microwave). With two forks, drop date ball in chocolate and coat. Set on waxed paper until set. Can put in refrigerator to set up quickly. Enjoy!

Dust with powdered sugar if desired.

Note: These are good with or without the chocolate coating.
