Boulder Valley School District earned their place among the ranks by overhauling a preexisting system that didn’t have nutritional value at the top of its must-have list. According to Ann Cooper, director of food service for the Boulder Valley School District, the overhaul began five years ago when she signed on with the district.
The USDA estimates that as much as 15 percent of U.S. households are food insecure, meaning they don’t fully know where their next meal may be coming from. Add to that a recent study from the World Bank that found somewhere between one-fourth and one-third of all food produced globally for human consumption is wasted — one of the biggest obstacles to conquering poverty.
A new Farmers´ Market vendor for this year, Rowdy Mermaids, will be quenching people’s thirst with Kombucha, which they craft using farm-direct organic teas and locally-sourced fruit, as well as filtered Colorado snow melt.
