Mybeloved football season is back in full swing, and I, for one, can honestly say, “Yes, Hank Williams Jr., I am ready.”

 

Fall and football make me happy, so I’m whipping up a “manly man” treat to make you happy, too: Broncos Brownies. Real creative, I know.

I’m actually not sure about the manly meter on a brownie, but rest assured these babies will be chock full of goodness and something you can really sink your teeth into. I guess we could call them Buffs Brownies as well, with fingers crossed that the Buffs are manly men this season. There are batches of brownies in it for them if they are.

Brownies make great treats for football parties as they are great grab-and-go desserts, and once they are ready and sitting on their platter, which I assume might be a fancy plastic football-shaped thingamajig, you don’t have to worry about them. No heating up, adding garnish or keeping refrigerated. And if you are enjoying the game at a friend’s house, these travel very well. Here’s hoping the Buffs can do the same this season. Ba-dum-ch.

 

I am stuffing these brownies full of semi-sweet chocolate chunks, peanut butter chips, walnuts and sliced almonds. The great thing is, once you have the recipe for the brownies, you can add whatever you like. Endless options, that’s what I’m talking about.

You noticed I didn’t proclaim my love for the New York Jets yet. I got read the riot act from a few readers last year, so I will try and keep it under my apron this season. I’m not making any promises, though. For now, I’m all Broncos and Buffs, and I hope that whatever team you support, you whip up these brownies and enjoy the game.

Oh, one last reason they rock for football, you only need one hand to enjoy them (no fork, no spoon) thus leaving you a free hand for your beer.

My work here is done. Now, follow the directions, put some love into it and invite me over when it’s done.

I’m whipping up a ‘manly man’ treat to make you happy


Broncos Brownies

1/2 cup unsalted butter

1 cup semi-sweet chocolate chips

1 tsp. instant espresso powder (optional)

1 tbsp. cocoa powder

1 cup brown sugar

1 tsp. vanilla

3 eggs

1 cup flour

1/4 tsp. salt

1 cup peanut butter chips

1 cup sliced almonds

1 cup roughly chopped walnuts powdered sugar for dusting

Preheat oven to 350 degrees. Butter or lightly grease an 8×8-inch baking pan (or line with foil with extra edges to easily lift out brownies).

Melt butter and chocolate in medium saucepan on low, stirring constantly. Add in espresso powder and cocoa powder and stir until dissolved. Take off heat and stir in brown sugar and vanilla. Add in eggs one at a time, and stir until well combined.

Mix in flour and salt. Fold in peanut butter chips, almonds and walnuts. Pour into prepared baking pan.

Bake for 22-25 minutes. Do not overbake. Take out and cool on wire rack.

Dust with powdered sugar. Serve at room temperature. Enjoy!
