Here’s a really well done chicken sandwich. The folks at Louisville’s Waterloo take a fat chicken breast, hand-bread it, fry it and coat it in vinegar-forward hot sauce. Placed on a toasted bun and topped with pickles, mayo and lettuce, it’s a no-frills, comfort-food gem. The chicken is juicy, the spice is just right, the pickles perk up each bite and the mayo and lettuce cool it all down. Enjoy to-go or eat it there — downtown Louisville has done a fantastic job closing down Main Street and designing an outdoor dining space that you actually want to hang out in.
